Inside Story
Rick Davis spent years crafting elegant Chardonnay and Pinot Noir under legendary winemaker Greg Lafollette (of Flowers, Tandem and LaFollette) before striking out on his own. Davis taps his connections with some of Sonoma’s most coveted vineyard sources for his boutique label, whose made-up name has nothing to do with California—it’s actually a tribute to his ceramicist wife’s two studio cats, Callie and Star, who liked to laze about on stacks of boxed-up wine. For this rare Pinot Noir, Davis combined small amounts of fruit, all vinified separately, from six different Russian River vineyards.
This is truly a wine that demonstrates the art of blending: three of the sites come from very cool-climate vineyards close to the Pacific coast, and contribute the vibrant, spicy aromatics, juicy acidity and bright, lightly floral fruit tones typical of Pinot Noir from cooler climates. Working like a chef with a spice rack, Davis then blended their juice with components from warmer vineyards, which gives the wine lushness, depth and richness. The result is a seamlessly balanced Pinot Noir that offers the aromatic complexity and light-footedness of a cool-climate wine and the fruity depth typical of warmer climates.

Red fruits and spice dominate the aromas, with scents of wild strawberries, cranberries, bergamot (think Earl Grey tea) and cola. The medium-bodied palate is bright and supple, with plump red plum, sassafras and raspberry flavors getting intrigue from notes of coffee, smoke and baking spice.
At the Table
Pinot Noir makes a fabulous wine for foods with earthy flavors, especially mushrooms. And because this wine’s tannins are soft and supple, it’s just as delicious with vegetarian fare as with meat. Try the Calstar Pinot Noir with a dish based on wild mushrooms, such as a risotto, a savory tart or rice-and-cheese-stuffed portobello caps. Alternatively, savory, umami-rich poultry, quail and squab dishes make great matches.
